Eating raw is refreshing and cleansing. It may seem complex or confusing but it does not need to be. Try swapping out your typical choice of protein for heart healthy nuts, a perfect palate to create any flavor profile and satisfy hunger.

This incredibly easy “taco” recipe packs in plenty of flavor and texture.  You won’t miss your meat!

Ingredients & Methodraw tacos ingredients

  • 1 cup raw shelled walnuts
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup chopped onion
  • 1/8 cup cilantro
  • 1 garlic clove
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • juice of 1-2 limes
  • whole leaves or baby gem, boston lettuce or collards

Add all ingredients to food processor and pulse until a chunky meat-like texture is achieved.  Serve in lettuce or collard leaves and garnish with tomato, avocado and cilantro.
