I remember growing up when I lived in Puerto Rico for a few years. Where I lived there was a Mango tree and I was able to reach out my bedroom window on the second floor and pick the mangos right off. Every time I see a mango it reminds me of those times. That’s why on a recent trip to the International Market as I was browsing the isles I noticed the Mango sauce and had to grab it. I immediately thought of shrimp and coconut. I always keep shrimp on hand but I like to have it with different flavors every time. On this occasion I wanted to keep it simple. I only used three ingredients so I wouldn’t mask the flavor of the shrimp or the mango sauce. The sweet, spicy, and tart combination of flavors from the mango, peppers, onions, garlic, cilantro, and lime was an exciting blend for the taste buds. It went perfect over white rice for an Asian twist.

Ingredients & Method

  • 3 Tbsp. Mango Sauce
  • 1 Tbsp. Fresh Lime Juice
  • 1 Tbsp. Sofrito
  • 1 Lb. Medium – Large Shrimp


Preheat oven in bake for 400 degrees. Combine mango sauce, sofrito, and lime juice in bowl. Stir to mix well. Rinse shrimp and place in single layer in baking dish. Brush shrimp with sauce mix making sure to saturate well. Save some of the sauce for a second coat halfway through cooking. Place in oven for 7 minutes. Brush with remaining sauce and place in oven for another 7 minutes but this time set it on roast instead of bake for 350 degrees. Remove from baking dish and serve over brown rice.
