Super Light Bacalao Guisado
A Puerto Rican staple without the guilt, bacalao guisado or salted cod fish stew with batata (sweet potato) mash is something that has been eaten in “La Isla del Encato” for decades and passed on from generation to generation. Here’s a dynamic healthy recipe that will have your taste buds begging for more without the guilt.
Ingredients & Method (Serves 4)
- 2 pounds of batata blanca (white sweet potato)
- 1/8 cup Olive oil or Avocado Oil
- 1 tablespoon of sea salt
- 1 package of deboned bacalao (Salted Codfish)
- Olive oil (Enough to coat nonstick pan)
- 2 peppers any color of your choosing
- 1 medium size onion color of your choosing
- 1 generous tablespoon of garlic paste
- 2 tablespoons of sofrito (blended cilantro, variety of peppers, onions, recao)
- 2 tablespoons Tomato Paste
- Sea Salt to taste
- Ground pepper to taste
- 1 teaspoon of oregano
Bacalao should be soaked overnight in a gallon of water, change out water at least twice, it will soften the dehydrated fish and release some of the salt. If you do not have time to soak bacalao overnight you can boil it, changing out the water until it is desired saltiness and texture, fish should feather. Coat a nonstick pan with olive oil sauté on a medium flame sofrito, garlic, oregano and tomato paste. Once sautéed feather the bacalao into the pan, mix the bacalao into sauce until its completed coated, add ground pepper and sea salt to taste, cover pan and lower flame, let cook for 20 minutes on a low flame. In the meantime thinly slice peppers and onions, after 20 minutes have passed add peppers and onions and cover for 15 minutes on a low flame or until peppers and onions are at desired texture.
Boil a gallon of water, peel batata and chop into cubes. Once water has come to a boil add batata and let cook until tender. Once batata is tender drain water into a mixing bowl, leaving approximate two cups of water in with batata. Add avocado oil and blend with a hand mixer until batata is whipped, if needed add more water in which the batata was boiled. Add sea salt to desired taste.
Place batata on plate, bacalao on top and garnish with avocado. Enjoy!
