Power Up with Breakfast: Pumpkin, Avocado and Apples Smoothie!
It is not a secret that eating breakfast is a healthy habit that fuels our bodies with the so needed nutrients and calories after an overnight fast! Thus its name breakfast or “break the fast”. And for those hectic mornings when you have just a few minutes for a healthy breakfast, smoothies are without a doubt the way to go!
Typical combinations like banana-strawberries or tropical fruits are all well known and enjoyed by many. But if you have ever wanted to try something different, I highly suggest you add ingredients like avocados, pumpkin puree, almond or peanut butter, baby spinach and even some thick Greek yogurt. The key for a creamy and delicious smoothie is to add just the right amount of milk; too much milk or liquid will result in a watery drink.
Also, play with the flavors. It is best to combine sweet with tart or neutral ingredients, like mango-kale or banana-spinach. Don’t forget that a great way to boost the protein content of any smoothie (instead of protein powders) is to add some peanut or almond butter or some extra yogurt, trust me on this one, real food is ALWAYS the best way to nourish our bodies.
Ingredients & Method (Yields: 4-6 servings)
- 12 oz low-fat milk (soy or almond are ok)
- ½ cup pumpkin puree
- ½ avocado (Hass avocado is the creamiest of all varieties)
- 1 small apple, cored (LEAVE THE SKIN ON FOR EXTRA FIBER)
- ½ tsp pumpkin spice
Blend until well combined and smooth and enjoy!
