Learn to make this dish like a pro for Cinco De Mayo next week!  Fresh, seasonal ingredients rolled into a warm tortilla can never be bad.  This addictive, healthy fish taco, straight from Chef Angelo’s Hell’s Kitchen eatery, Añejo, is filled with succulent grilled mahi-mahi, creamy guacamole, cotija cheese, and minced jalapeño for a little kick.  Eating healthfully with flavor does not have to be a challenge and this recipe is proof.

Here is what you’ll need for the Fish Tacos:

Chipotle Syrup:

  • 3 tablespoons agave nectar
  • 1 teaspoon lime juice
  • 2 teaspoons chipotle chile powder
  • ¼ cup pineapple juice

Chunky Guacamole:

  • 2 ripe avocados
  • 2 tablespoons fresh lime juice
  • 2 tablespoons diced fresh tomatoes
  • 1 tablespoon minced jalapeño
  • 1 tablespoon red onion
  • 2 teaspoons chopped fresh cilantro
  • ½ teaspoon kosher salt

Fish:

  • Vegetable oil, for greasing
  • 1 pound mahi-mahi fillet, cut into 4 pieces
  • Kosher salt
  • 4 six-inch corn tortillas
  • ½ cup shredded cabbage
  • ¼ cup grated Cotija cheese

 

For the No Guilt Mojito

  • 1/2 lime, cut into 4 wedges, plus 1 wedge for garnish
  • 1 1/2 tablespoons fresh lime juice
  • 2 tablespoons torn mint leaves, plus 1 sprig
  • 1/2 teaspoon organic agave
  • 2 ounces white rum
  • 4 ounces club soda
  • Ice cubes
