Fresh Collard Green Veggie Wrap
Summer is officially here and BBQs are in full bloom. As a vegetarian, I am often limited to house salads and the usual veggie dip platter. I’ve been known to eat pieces out of decorative fruit bowls, the real ones of course.
My friends and family think my fridge is packed with tofu, which couldn’t be farther from the truth, sure I love my veggies, but my meals are always well-balanced, decadent and satisfying. I have adopted the BYOB philosophy (bring your own burger) and often show up veggie burger in tow. One of my favorite BBQ or picnic dishes is a collard green wrap, filled with a grilled, veggie patty, fresh tomatoes and caramelized onions. The nuttiness of the burger together with the crunchy collard green leaf and tangy mayo dressing is an out of this world combination.
I’ve had my share of veggie burgers and Amy’s Burgers are my favorite, their All American burger has a delicious smoked hickory taste that could rival even the meatiest of burgers. Assembling the wrap is quick and easy, just make sure to bring extras, your friends and family are sure to be intrigued and pleasantly surprised at how delicious vegetarian options can be.
Ingredients & Method (Serves 2)
- 2 large Collard Green leaves
- 2 veggie patties
- 1 medium Tomato
- 1 medium Onion
- 1/2 tablespoons Olive Oil
- Vegenaise to taste
Lightly coat veggie patty with oil, grill for 3-5 minutes on each side until lightly browned.
Cut the onion into thin rings, add ½ Tbls olive oil to pan and then slowly cook onions over medium heat, stirring every 5-10 minutes until the onions caramelize and are a light brown color.
Dice tomato and mix with Vegenaise, set aside.
Rinse collard green leaves, and then top each leaf with one veggie patty, caramelized onions and the tomato, vegenaise mix.
