End the Summer with these savory Pork Chops in Peach Salsa
Unsure what to make for dinner tonight? Head to your local Farmer’s Market and you’ll get the most delicious peaches or nectarines which are some of the glorious fruits in season from July through September.
Besides their superb sweetness, juiciness, and versatility in the kitchen, peaches are an excellent source of vitamins A and C as well as a good source of fiber (3 grams of fiber in a medium-large peach) They are great for desserts as they are with your favorite lean cut of meat for a surprisingly easy to make meal!
So, I hope I have given you some great reasons to enjoy this delicious fruit and try it out in your kitchen. I paired my pork chops with brown cilantro rice for a balanced and healthy meal my family loved and yours will too! Enjoy!
Ingredients and Method (Serves 4)
- 4 (2-3 oz) boneless pork loin chops
- 1 Tbsp olive oil
- ½ small onion, finely chopped
- 2 peaches, fresh and cut in thin wedges
- ½ cup water OR unsalted vegetable stock
- Salt and pepper to taste
Heat the oil in large skillet (Does NOT need to be non-stick) over medium-high heat. Lightly season pork chops with salt and pepper. Sear the meat until golden brown turning once using tongs (Abstain from using forks as the perforation may cause the juice of the meat to escape). Remove meat from skillet and keep warm In the same skillet, lower the heat and soften the onions until translucent, scraping all bits. Add the peaches slices and cook for 2 minutes or until peaches have caramelized (turned golden brown). Add the vegetable stock to the pan (deglaze) and return the pork chops to skillet. Cook for an additional 2 minutes and serve with your favorite accompaniment.
