Cheat Day Dessert Under 200 Calories: Grilled Peaches with Almond Butter and Mint Berry Compote
Sweet, nutty, creamy, and topped with a mint berry compote, this peaches-and-creme inspired dessert is just as perfect for a romantic date night as it is for an evening of binge-watching Netflix a la solo. It’s light, aromatic, and super easy. If you hate cooking, you’ll appreciate that you’ll be enjoying dessert less than 20 minutes after slicing the first peach.
Grilled peaches are delicious and sharing takes some self-discipline. If you’re cooking for one, avoid temptation by grilling only one peach half. Any extra compote can be refrigerated and used later to top virtually anything from fresh banana slices on whole grain toast to a yogurt parfait.
Ingredients & Method (Serves 4)
For the Compote:
- 1 cup mixed berries
- 2 tsp lemon juice
- 2 tsp maple syrup
- 1 tbsp water
- 1 pinch fresh mint torn into small pieces
Add berries, lemon juice, maple syrup, and water to a sauté pan on medium heat until the fruit mixture comes to a gentle boil. Lower the heat and stir for about 5 minutes. Set aside.
For the Grilled Peaches:
- 2 peaches (soft, not squishy)
- 4 tsp almond butter
- 4 scoops of frozen nonfat Greek yogurt
Set your grill to medium heat. Slice the peaches in half. Ditch the pits. Place the peach halves on the grill flat side down for about 5-6 minutes. Flip the peaches onto their round surface for another 5-6 minutes. Remove peaches from the grill. Add 1 tsp of almond butter to each peach. Top each peach with a scoop of nonfat Greek or frozen yogurt. Drizzle the sultry compote over the yogurt.
